A second steering wheel sits right in front of the instructor for faster, safer corrections than reaching across the student. It can also be detached when needed.
Most training cars only give the instructor a brake pedal. This setup adds instructor-side gas as well, so paired with the second steering wheel, the instructor can smoothly take over and safely finish the maneuver when a student hesitates or freezes.
A fast top-down view helps with parking, curb control, and tight maneuvers, while the instructor can monitor the situation more easily even while moving. (Road test friendly, just don't rely on it alone.)
